Recipe: House-Made Strawberry Rhubarb Granola

Yields: 4 cups
Shelf Life: 1 week at room temp, 2 weeks refrigerated

Ingredients:

● 2 cups gluten-free rolled oats
● ½ cup sunflower seeds
● ¼ cup unsalted pumpkin seeds
● ¼ cup finely ground flaxseed
● 1 tsp ground cinnamon
● ¼ tsp kosher salt
● ¼ cup organic agave sweetener
● 2 tbsp extra virgin olive oil
● ½ tsp pure vanilla extract
● ~5 ⅜ tbsp small-diced rhubarb
● ~5 ⅜ tbsp small-diced fresh strawberries

Instructions:

1.     Preheat oven to 325°F. Line a baking sheet with parchment paper.
2.    In a large bowl, mix oats, seeds, flaxseed, cinnamon, and salt.
3.    Stir in agave, oil, and vanilla. Fold in strawberries and rhubarb.
4.    Spread evenly on the baking sheet.
5.    Bake 30–35 minutes, stirring gently every 10–12 minutes, until golden and nearly dry.
6.    Let cool completely; store airtight.
